It's much more difficult to to find tomatoes of high quality at a reasonable price, from a trusted source. Tomatoes, together with eggplant, bell pepper, zucchini cannot be just average to cook a good ratatouille. If one fails, everything is unbalanced, a bit like in an orchestra.
